The Terre à Terre Blanc was first produced in 2015.
This wine is made from white varieties coming from vineyards we own and manage (in 2015, this is 100% Sauvignon Blanc and 100% from Crayères vineyard). It will always ferment in large French oak Foudres, and will always have some light residual sugar.
Each year, the relatively late hand harvested fruit is whole bunch pressed to 2,000 or 3,000 French oak Foudres. Fermentation in foudre is very slow (3-4 months). At the end of fermentation, the wine is lightly sulfured to prevent the malolactic fermentation. The wine is aged in Foudre for a further 3-6 months.
The Terre à Terre Blanc will always be made in small volumes in a crisp and off-dry style to balance the very ripe fruit flavours. A great aperitif wine.
