The low vines / closed spaced Cabernet Sauvignon from Wrattonbully was harvested last week on Thursday and Friday.
The fruit was ripe, as confirmed by must analysis of 13.3 Baumé and excellent pH and acidity and we already see good colour extraction in the 1-tonne fermenters after two days cold soaking. This vineyard, planted in 2004, has only seen warm and dry vintages and has been put to the test of a much cooler – more European – growing season. How this will impact the flavour profile and the tannin structure of the finished wine can only be guessed at this stage.
