The 2021 Blanc de Blancs is toasty and reductive, with notes of crushed shells and lemon curd, pith and zest. The wine in the mouth is laden with lemon drop and barley, brine and apple skin. This is a powerful expression of Chardonnay; the chalky phenolic shape through the finish is so attractive. This is a lovely wine. 12.9% alcohol, sealed under Diam. The 2021 DAOSA Blanc de Blancs comprises 100% Chardonnay grown entirely in the Bizot Vineyard in the Piccadilly Valley. The fruit was harvested between March 10 and 12, 2021, and was whole-bunch pressed. Primary and malolactic fermentation took place in old French oak barrels, where the wine was aged with lees stirring for six months. Tirage occurred in October 2021, and the wine spent 42 months on the lees in bottle before disgorgement in June 2025.
