The NV Natural Réserve leads with green and red apple, musk stick and brine. The palate is textural and focused, with bright and pithy acidity, energetic mousse and delicate length. This is really good. 12.5% alcohol, sealed under Diam. The DAOSA Natural Réserve 8th Release is composed of 75% fruit from the 2023 vintage and 25% reserve wines from 2022 and 2021. The blend comprises Pinot Noir (62%), Chardonnay (29%) and Pinot Meunier (9%), all grown in the Piccadilly Valley. The fruit was harvested between late March and early April 2023 and was whole-bunch pressed. Primary and malolactic fermentation took place in a stainless steel tank, while the reserve wines were aged in old foudres. Tirage occurred in November 2023; the first batch spent 19 months on the lees in bottle before disgorgement in June 2025.
