Terre à Terre Crayères Vineyard Cabernet Sauvignon 2014

Xavier Bizot’s Australian label. 95% Cabernet Sauvignon, 5% Cabernet Franc on terra rossa over limestone. 21-day fermentation then a year in one-year-old foudres and a further six months in another one. Just 900 six-bottle cases filled.
Lightly minty but beautifully textured and balance – no excess acid or tannin. Very obviously Australian but not at all industrial. Refreshing acidity is dominant but not excessive. Still quite young but you can imagine its developing complexity. Almost like a mouthwash!
