2021 Terre à Terre Crayères Vineyard Reserve Cabernet Shiraz Franc
Flagship red blend from the Bizot’s. This release sees the mix as Cabernet Sauvignon (58%), Shiraz (21%) and Cabernet Franc (21%). From fruit grown on the 37 million year old soils in the Crayères vineyard, (located next to the lauded Tapanappa Whalebone vineyard). Winemaking sees maturation in French oak barrels and old oak foudre for 14 months, before being rested in bottle for over 24 months. Cork closure. Deep garnet hue. Both dense and delicate aromas wrapping blackberry and red plum fruit. Savoury balances of light dust, pouch tobacco, cola syrup and pencilly graphite before cedar and peppercorn sauce, closing with lavender and violet florals. Intense, textured and tightly framed. The tannins firm, elegant and structured, while the acidity is unexpectedly vibrant. Effortless, with an exacting preciseness to the balance of fruit and winemaking. The tail long, full and persistent. An exceptional release worthy of being spoken about in the best wines of the region (including neighbouring Coonawarra). Reviewed August 2025.
