The end of the 2011 ripening season is stop and go, with a very slow ripening process after veraison, up until last Monday. Then the rain stopped this acceleration in the maturation process in the last couple of days. The fruit can be expected to slowly ripen in the next few days until the end of the ripening season.
The close-spaced Sauvignon Blanc should be hand harvested in 10 days. Flavours are already showing.
The close-spaced Cabernet Sauvignon looks great, very open canopy, loose bunches, small berries and very uniform ripening.
We will surely see the benefit of having low trellis this year (50cm above ground), with that extra heat from being closer to the soil contributing more flavours.
