“This vintage sees this as a dominant Cabernet Franc (92%) blend and only 8% Shiraz. From a cool and dry Wrattonbully vintage, allowing 30% whole bunch. French oak for 12 months (30% new). Bottled without filtration. Piercing black fruit: cassis and olive. Blackberry conserve (but not jammy) with cedar, sandalwood and cola leafy lift. Sandy white pepper, chalk dust and violets. Dry, savoury and serious. Intense drying, puckering, spreading tannin with a wink from cheeky chocolatey oak. Seasoned with peppery spice this is a blade for carving through a dish rich in protein and fat. Now to 15 years plus.”
