The Bizots put a lot of care and attention into making their flagship Sauvignon Blanc with their standard approach: juice spends three weeks cold-settling in a stainless-steel tank before being fermented in eight old 600L French oak demi-muids. Then aged in the demi-muids for eight months on full lees with no bâtonnage (lees stirring). Then transferred to stainless steel for a settling month before being bottled. Alcohol has stepped up from the 2021.

Pale lemon straw in colour. A ruse of vanilla bean and passion fruit cream over fine silicon rich wet sand, torn open grapefruit citrus, green apple skin with juxtaposed bittersweet pineapple core. Powerful without being overt: a big frame with tight and tense acidity that brings a sharp exhale. A layered and textured palate which carries long. It’s rare to say a Sauvignon Blanc is imposing, but the inherent potency of this wine makes it one of Australia’s benchmarks.”
