One of two sibling sauvignons from winemaker Xavier Bizot, inspired by the way riesling and gewurztraminer is made in Alsace, fermented slowly in very large French oak vats known as foudre. This version has an extra little twist: it’s got a tiny (and I mean tiny) amount of residual sweetness that adds a fascinating contrast to its mostly savoury styling, flinty, charry notes to the fore. It’s an intriguing wine, and bloody tasty, too. Tony Love
