“Hand-picked, whole-bunch pressed, cool fermented in 600L demi-muids for 10 days, then left on lees for a month without SO2, then lightly sulphured and kept on lees for a further 9 months. It is all about texture and structure, and emphatically not about tropical fruit. Made to be consumed with food.”
