Here’s a fine example of where what you leave out, is often more important than what you put in.
In this case, they’ve left out loading it up with gross oak and reckless chemistry set tartaric acid additions: the Achilles heel of the Limestone Coast. This was raised for 7 months in four year old French barriques, then spent 14 months in a one year old 4000 litre barrel. 460 dozen produced.
Blackcurrant, blueberry, aniseed, sage, a little spice and a slight menthol lift – deeply fruited and satisfyingly ripe to smell. Full bodied, has a distinct ‘mineral feel’ with plentiful graphite tannin, even and unobtrusive acidity, and very little oak flavour. There’s a minor level of warmth, but it’s enveloped in the wine. Length is excellent. Proper Cabernet here. So good to drink. Bravo.
