“Museum release here from the Bizots. The label evolution is worth noting. I think the two lapins in the boat are meant to signify Lucy and Xavier?!?

From the original winemaking notes: “The must was fermented in a mixture of 14 old French Vosges oak barriques, and six 600L demi-muids. After 15 days of fermentation, the wine was left on lees for one month without sulphur, with fortnightly lees stirring. It was then racked, lightly sulphured and transferred back in barrels and demi-muids on full lees, where it stayed for a further four and a half months with lees stirring during the first month. No malolactic fermentation.”

Just medium lemon straw in colour with bright highlights. Complexing and developing nose: a touch of older asparagus stalk, wet sand, creamed honey, warm crumpet, snow pea sprouts, singed lemon, beeswax, honey drizzled green melon, nectarines and crunchy passion fruit seed. Rich and still detailed. The width starting to fill out with creamy notes over some still sharp acidity. Flavours interplay with savoury, citrus and stone fruit underpinned with a chalky intense dryness and incredible length. Still promising to develop further.”
