100% sauvignon blanc made from 60% late harvest grapes, 35% shrivelled fruit and 5% botrytis grapes. There is the perfume of hulled pomelos, pineapple core and some subtle mock orange blooms. White peach notes with lingering glacé pear sweetness. Here you have a wine that, if served chilled, drinks like an off-dry wine, complementing rich pork and apple sauce. But, with some warming up over time, it will easily manage those fruit desserts. It’s well balanced, with the natural sweetness of the variety and ladles of fruit nectar.
