There’s something of a Sauvignon Blanc reset with this terrific Savvy from Wrattonbully. After serious bunch thinning to maximise flavour intensity, a portion of the fruit was whole bunch pressed and fermented in a mix of older oak and stainless steel. It has created a wine of texture and subtle aromatics that expresses Sauvignon Blanc in an appealing and captivating way. The flavours are finely balanced with that little bit of very subtle oak and lees influence that is more about texture, just perfect. The fine minerality adds the final flourish to an impressive and highly drinkable wine.
