DAOSA (Dedicated Artisans of South Australia) is the sparkling arm of Terre à Terre wines: Xavier Bizot and Lucy Croser.  The 2020 vintage sees the same winemaking as the previous flagship releases: Cold settled juice in tank for 6 weeks before transfer to two 600L old oak barrels for primary and then malolactic fermentation for 6 months. Tiraged in November 2020 to allow secondary fermentation in bottle and further aged on lees for 3.5 years with a low dosage (5g/L) at time of disgorgement in September 2024.

Pale straw hue. Precise and prevalent bubbles to bead. A wash of aromas and complexity: Yellow citrus to pink grapefruit, white flowers, apple flesh with winemaking echoes of pistachio and hazelnut nougat, double cream, shortbread, caffe latte and crushed rock salt. The palate is fine and elegant, with an inherent and undeniable power. There’s a seriousness and a richness from the lees and malolactic fermentation that shifts between nuttiness and creaminess, all the while maintaining exceptional precision and intensity.
