Creamy light gold in the glass with a steady bead and a nose of preserved lemon, Sicilian green olive, yellow pome, strawberry, a hint of guava, freshly shaved fennel, Chantilly, honeyed cashew, tarte tatin and nougat…drool…
In the mouth you’re met with a fine tender bead and incredibly fresh flavours of pink lady apple, white pineapple, crisp stonefruit, hints of cherry, raspberry and tart strawberry that are driven by bright acidity that makes everything shine in a wonderful way. It’s dry, precise, focused, pure and impeccably balanced with a spotlight on the stunning fruit from which it’s been made. If this had a bold seam of chalky minerality running through it alongside that fruit, I’d give up Champagne for good! Utterly delicious and oh-so fine. I love this!
