“From one of the highest vineyards in the Adelaide Hills comes this pearler of a sparkling. Celebrate with this in your glass and you’ll be surrounded by nothing but big smiles.
From a warmer year, the fruit was whole bunch pressed and the initial fermentation took place in French oak where it stayed for eight months on lees going through MLF. Tiraged in early 2020, it then spent a further three and a half years in bottle before being disgorged with a low dosage of 6g/L in September 2023. All up, the Chardonnay for this Blanc de Blancs spent more than four years in total in barrel and bottle.
Dive in with pike. Veneers of interest peel off effortlessly in the form of almonds, cashews and a bakery load of bready things featuring sourdough and brioche. White fleshed nectarines and some peach sit at the core and there is a lemon vibe and tang that raises the bar. Terrifically dry, its fine bead and seemingly forever length shows its class. It’s a brilliant drink and easily the best in the DAOSA range.”
