“Close-planted vines, hand-picked, whole-bunch pressed, cold-settled in stainless steel for 2 months, then fermented and matured for 9 months in four 600l French demi-muids, 180 dozen made. It is very complex, especially after 18 months in bottle, and is ready now.”
