Daosa Natural Reserve (April 18 disgorging)

The sparkling base was made up of 85% 2016 vintage, with a blend of reserve wines from 2015 making up the balance. The base was aged in barrel for 18 months without sulphur prior to triage and ageing on lees in bottle for a further 18 months before disgorging. There were only 2,850 bottles produced.

Xavier Bizot, the proprietor of Terre a Terre with his wife Lucy are no stranger to sparkling with Xavier’s family owners of Champagne Bolllinger and is a member of their board. This release brings some of the purity and flare one expects from the esteemed Champagne house to the Adelaide Hills.

A light yellow in the glass, the nose enjoys flint and oyster shell aromatics with white peach and nectarine fruit. The palate has fresh red apple that highlights the Pinot Noir in the blend which is ably backed by fine lines of citrus zest. The finish has a tautness of stone fruits that is cut through by creamier lees inputs, the length impressive.
