“50/48/2% cabernet sauvignon/shiraz/cabernet franc. Matured for 8 months in French oak (31% new), then a further 11 months in old oak foudres (4000L). Blood plums, iodine and finely crushed black pepper on the nose. In the mouth this is savoury and fine; the structuring tannins create undulating shape right the way through, from the very first sip until the end of the lingering tail of flavour. The tannins are one of the defining features of this wine – there’s a chalky persistence to them that is most beguiling. Elegant, coastal (fresh, breezy, briny and with a helping of kelp) and long. Very smart. ”
