“There’s a fabulous mousse and really persistent bead upon pouring. Really complex aromas of baked apple, citrus, nuts, nougat and honeysuckle. So much to like here. Flavours are fine, focused and very complex. There’s lovely weight and mouth-feel and the length is impressive. The flavours are in the citrus, just-ripe stone fruit and toast realm, and there’s also a textured saline minerality. Top class fizz.This is a stellar sparkling wine, extremely vinous and interesting with a good deal of bright, tightly wound bubble and a general sense of fanciness in tow. It’s quite a rich style yet holds crackling saline minerality, a tight core of grapefruity acidity, layers of baked apple, marzipan, brioche, green melon and refreshing lemony tang. Quite powerful as a style but with finesse, delivering a very serious expression of fizz. What a delight.”
