Light, bright yellow colour; slightly rubbery sulfides on the nose at first, straw and oyster-shell beneath, turning spicy with time in the glass. A hint of oak. The palate is crisp, fairly dry and refreshing, with intensity, line and length. It’s quite youthful but is showing attractive development. Penetrating, refreshing wine that would be great as an aperitif, or with oysters. Serious Aussie sparkling wine! (Bizot vineyard. Disgorged June 2026).
