Flagship red blend from the Bizot’s. This year it’s only Cabernet Sauvignon (78%) and Shiraz (22%). Fruit grown on the 37 million year old soils in the Crayères vineyard, (located next to the lauded Tapanappa Whalebone vineyard). Bottled under cork (using 1 by 1 technology).
 

Opaque garnet with ruby rim. Full and layered: choc-mint edges over blackberry, cassis, turned earth, white pepper, pencil and graphite, ‘parmesan’ rind, vanilla oak, just plucked rose petals and potpourri florals, warm red apple and deep basso continuo of umami: constant evolution in the glass with each swirl. Firm, handsome and imposing (for the now). There’s youthful protests of plum and blackberry, well framed by tight and prevalent tannin. Long, detailed and serious. This label worthy of being discussed in the top ‘Australian blends.’
