“Gets a bit of old wood, and about four years on lees, total.
White peach and pear, a buttered cashew and toffee richness, some salty oyster shell character too, along with a violet top note. It’s complex and spicy, a wine of richness and depth, saline with some green apple and citrus along with stonefruit, bubbles are fine and persistent, and the finish is dry and yeasty, with a pleasing chalky grip to close. Very good. It has weight and presence, and feels vinous, which is something that sets it apart from so many anodyne sparkling/Champagne wines.
