DAOSA Blanc de Blancs 2020

Light straw in colour with a rush of mousse and a very pretty nose of jasmine, apple blossom, lemon spiked mineral water, Sicilian green olive, white peach, floral pome fruit, brie, toasted sourdough and a hint of oyster.
In the mouth it’s saline, fresh and focused with a tight core of pear, granny smith apple, honeydew, white peach, fresh apricot, lime cordial and orange sherbet that’s propelled by chewy, mineral acidity and textured with a fine bead that disappears a bit too prematurely, turning it quite vinous. There’s Aussie generosity and intensity of fruit, but it expresses within a tight physique, a DAOSA signature. It drives long and ends with a sustained chord of melon, lime, lean stonefruit and a chalky grip. Classy as!
