CREATING CLASSIC AUSTRALIAN WINES

In the Dec-Jan issue of Gourmet Traveller WINE Ken Gargett took a look at Australian Sparklings giving the 2009 Daosa a glowing review and 93 points. Here is what he said:

Daosa might sound like a dodgy Indian curry, but it’s actually a high-altitude chardonnay vineyard in the Adelaide Hills, which was originally planted in the mid-’90s by Christian Bizot (of Bollinger fame). Some fruit was retained in 2009 and this Blanc de Blancs is the result. Fermented in old oak barrels, it’s an impressively complex wine with notes of hazelnuts, fine balance, good length and a pleasing hint of parmesan on the finish (93).
