Down to Earth Sauvignon Blanc 2016
A welcome addition to the Australian landscape, earlier harvested fruit was whole bunch-pressed and fermented in a complex array of large format French oak for textural breadth, while the later harvested component was destemmed and rendered in tank at low temperatures. This is reminiscent of solid, quaffing sauvignon from the Graves, with a textural dimension seldom seen in Australia. Quince, apricot, a resinous slate component and a gloss of lemon oil are carried by a confluence of acidity and phenolic pick up. Very good.
