The grapes for this new sparkling come from an Adelaide Hills vineyard planted by Christian Bizot, a late former chairman of Bollinger. Bizot’s son Xavier now owns the vineyard and while he sends most of the grapes to Petaluma for its sparkling Croser, he keeps some for himself. In this pristine and elegant wine, 100 per cent chardonnay grapes were left on lees in old barriques before spending 42 months on lees in bottle.
