The Bizots put a lot of care and attention into making their flagship Sauvignon Blanc but this year sees a slight change. 48% whole bunches pressed into old 600L French oak demi-muids. Then rest into stainless steel. No malolactic fermentation.

Savoury and layered, varietal nuance of gooseberry and passionfruit husk with vanilla and baked goods tinges from oak. Brazil nut, fresh straw bale, flint, lemon citrus. Restrained power with intensity and tightly wound textural flesh. Achingly dry with balanced flesh and flow. An excellent Sauvignon Blanc.
