“A lightly savoury, herbal version of Sauvignon Blanc that registers high on the umami scale. Fermented in tank and large French oak demi-muids (big) and foudres (very big), the role of seasoned oak brings not only soft texture but some delightful Asian spices to the fore. Gooseberry, snow pea, stone fruit, grapefruit-citrus intensity with some herbal interaction and spice. Down To Earth also introduces a bright saline, mineral quality through the palate that is super fresh and lively. There’s a lot happening here. Enjoy with or without food.”
