The 2017 Late Disgorged Blanc de Blancs comes from a cool season, and the wine has lovely persistence and intensity. It is savoury, chalky and persistent, and the measure of flavour from the front of the palate to the end of the finish is consistent, unbroken and fine. This is very good. I like the notes of dried flowers, pressed linen, chamomile tea and brine. This is very pretty.   Comprising Chardonnay grown entirely in the Bizot Vineyard in the Piccadilly Valley. The fruit was harvested on March 25, 2017, and was whole-bunch pressed. Primary and malolactic fermentation took place in old French oak barrels, and the wine was then aged in oak with lees stirring for eight months. Tirage occurred in January 2018, and the wine spent 90 months on the lees in bottle before disgorgement in June 2025.
