Terre à Terre Crayères Vineyard Sauvignon Blanc 2015
Whole bunch pressed then settled for 15 days before being fermented for 10 days in demi-muids, 20% of them new. Aged on lees for eight months it occasional stirring. Malolactic conversion was deliberately suppressed. The oak is currently just a little too prominent on the nose for me, with a slightly unsettling spicy oiliness. but on the palate it has very refreshing green leafy acidity. It seems really rather young and unformed at the moment. I’d wait for the oak to subside a little.
